French Onion Soup

Onions, cream, grated Emmental, butter, flour, bread

Steps

    Peel and finely slice the onions. Brown them with the butter over medium heat, then sprinkle with flour and cook for about 3 more minutes, stirring constantly, until the onions and flour start to stick to the bottom of the pan.

    Gradually pour in the stock, still stirring. Salt, pepper, then simmer on low heat for 30 minutes.

    Preheat the oven to 100°C. Cut the bread into large chunks, place on a baking sheet, and dry them in the oven for 15 minutes.

    Take the bread out and raise the oven temperature to 240°C.

    Stir the cream into the soup, then pour everything into a deep oven-safe dish.

    Place the bread on top of the soup, sprinkle with grated cheese, and bake until golden and bubbly.
