United States Chicken Celery Salad

Slice the chicken into strips. Remove the celery strings with a peeler. Cut the stalk into 1 or 2 cm slices. Peel and slice the onion. Snip the chives.

Place the chicken strips, onion, celery, walnuts and raisins (if using) in a salad bowl.

Brown the bacon in a bit of oil in a pan until crisp, then cut into strips and add to the salad. Add the snipped chives.

In a small bowl, squeeze the lemon, add salt, pepper, and the walnut oil. Pour over the salad and chill until serving.
