Potatoes, lardons, onions, chives, parsley, nutmeg

    Peel and rinse the potatoes in cold water, dry them thoroughly and grate them. Peel and chop the onions. Wash and chop the herbs.

    Melt the butter in a pan, add the lardons and onion, and sweat for 5 minutes.

    Add the grated potatoes and half the herbs. Salt, pepper, and add a pinch of nutmeg.

    Gather everything into a pancake shape, then brown in butter for 8 minutes on each side.

    Serve on a plate with the remaining parsley and chives sprinkled on top.
