Raclette

Potatoes, cheese, Grisons dried beef, cornichons, onions

Steps

    Boil the potatoes in their skins in salted boiling water for 15 minutes.

    Cut the cheese as directed by your raclette machine, or into slices about 3mm thick and 20cm long, then place them in an oven-safe dish.

    Preheat the oven grill to 260°C. Place 2 or 3 portions at a time if possible and melt the cheese under the grill with the oven door open, until lightly golden. Repeat with the rest of the cheese.

    Serve the potatoes and cheese, pepper to taste, and add the dried beef, cornichons and pickled onions.
