Preheat the oven to 180°C. Lay the shortcrust pastry with its parchment paper into a tart pan and prick the dough with a fork.

Spread the lardons (or diced ham) evenly over the pastry.

Crack the eggs into a bowl and beat together. Add the cream, grated cheese, a pinch of nutmeg, salt and pepper.

Pour the mixture onto the pastry and bake for about 30 minutes.
