Steps

    Trim and sort the spinach, wash it, then cook covered for 5 minutes in a pan of salted water. Drain and chop.

    Sauté the spinach in half the butter, then remove from the pan and keep warm.

    Crack the eggs and beat together. Mix with the spinach, salt, pepper, and add the nutmeg.

    Melt the rest of the butter in the pan, then pour in the mixture. Cook for a few minutes on low heat, then flip the omelette to brown the other side.
