Cook the rice in a pan of salted boiling water for about 12 minutes so it's cooked but firm.

Make the spice paste: peel and chop 1 shallot, peel and chop the garlic after removing the green germ. Finely chop the chili, mix with the garlic and shallot, add a bit of oil, and salt.

Slice the chicken breasts. Heat 2 tbsp of oil in a wok, add the spice paste and cook for 2 minutes. Add the soy sauce, then the chicken pieces. Cook for about 5 minutes on medium/high heat, stirring. Add the rice, stir, and cook for another 5 to 10 minutes.

Peel and finely slice the remaining shallots, then brown them in a pan.

Slice the tomatoes and cut the cabbage leaf into thin strips.

Serve the chicken rice in a deep serving dish, then garnish with the raw tomato slices, cabbage, and fried shallots.
