    Separate the egg yolks from the whites. In a bowl, whisk the yolks with the sugar until the mixture turns pale.

    Break the chocolate into pieces in another bowl, then melt over a bain-marie. Stir until smooth and creamy.

    Off the heat, add the butter and stir. Pour the melted chocolate over the sweetened yolks, mixing thoroughly.

    Add a pinch of salt to the egg whites and beat to stiff peaks. Gently fold them into the chocolate mixture.

    Pour the chocolate mousse into a large serving dish or individual cups, then chill for at least 3 hours before serving.
