Cook the rice in salted boiling water for about 10 to 15 minutes, keeping it slightly firm.

Meanwhile, brown the sausages in a sauté pan for 10 minutes. Reserve 2 tbsp of the rendered fat. Slice the sausages into rounds, and cut the chicken into strips.

Peel and chop the onion, then brown it over medium heat in the sausage fat.

Plunge the tomatoes into boiling water for 1 minute, then peel, seed, and chop them.

Wash the peppers, cut into quarters, remove seeds and white pith, then chop.

Peel the shrimp if needed. Add to the sauté pan: tomatoes, peppers, rice, chicken, shrimp, and sausages. Salt, pepper, add a dash of Tabasco, cover and simmer on low heat for 30 minutes, then serve.
