Steps

    Peel the onion, shallot and garlic, and chop them separately.

    Cook the rice in a liter of salted boiling water for about 10 minutes, then drain.

    Meanwhile, sauté the onion, shallot and garlic in a pan with the oil. Add the tomatoes and herbes de Provence (or bouquet garni), salt and pepper. Simmer uncovered on low heat for 20 minutes (then remove the bouquet garni if used).

    Add the rice to the pan and stir well. Lay the cod steaks on top, then pour the white wine over everything. Cover and cook on low heat for 20 minutes, then serve immediately.
