Trim and wash the leeks, split them lengthwise and cut into chunks. Peel and slice the onion thinly. Sauté the leeks and onion on low heat in a pan with the butter for 10 minutes, then remove from heat and let cool.

Preheat the oven to 180°C. Beat the eggs with the crème fraîche. Cut the ham into pieces. Wash the tomatoes and cut into quarters, then into small chunks.

Lay the puff pastry with its parchment paper into a tart pan and prick the base with a fork. Spread the ham and tomatoes over the pastry, then top with the leeks and onion. Salt and pepper, then pour the egg and cream mixture over everything.

Bake for 40 minutes, then let cool for about 30 minutes before serving.
