Steps

    Wash and pick the basil. Peel the garlic. Wash and stem the parsley. Cut the mozzarella into small pieces. Place everything in a mortar and pound, gradually adding the olive oil, until you get a smooth paste. Salt and pepper.

    Cook the tagliatelle for 11 minutes in a pan of salted water with a tablespoon of olive oil.

    Drain the tagliatelle and transfer to a deep serving dish. Pour the basil sauce over the top.
