Greece Vegetarian Spanakopita
Spinach, grated Kefalotyri, butter, phyllo sheets

Trim and wash the spinach, then plunge into salted boiling water for 2 to 3 minutes. Drain, then sauté in 25g of butter in a pan. Salt lightly.

Preheat the oven to 200°C. Butter the bottom of a round baking dish, then melt the rest of the butter separately.

Lay 2 phyllo sheets in the dish, brush with melted butter and sprinkle with a layer of grated cheese. Lay another phyllo sheet on top, brush with melted butter, and add another layer of cheese. Repeat once more.

Lay the second-to-last phyllo sheet, spread the spinach over it, then top with the last phyllo sheet. Sprinkle with grated cheese and bake for about 20 minutes.
