Shakshuka

Tomatoes, eggs, bell peppers, onions, paprika

Steps

    Heat the oil in a sauté pan. Peel and slice the onion, and brown it on low heat.

    Wash the bell peppers and cut them into strips.

    Plunge the tomatoes into boiling water for 1 minute, peel, seed, and dice them.

    Add the bell pepper strips to the pan and sauté for about 5 minutes, stirring, until they soften. Add the tomatoes, salt and pepper. Lower the heat, cover, and cook for about 10 minutes, then stir in the spices.

    Carefully crack the eggs and place them on top of the vegetables in the pan. Cover again and simmer for a few minutes, until the egg whites are set but the yolks are still runny. Salt and pepper the eggs, then serve.
