Greece Vegetarian Greek Salad

Wash the tomatoes and cut into chunks.

Peel the cucumber, halve lengthwise and seed it, then cut into small sticks.

Peel the onion and slice into rounds.

Wash the bell pepper and cut into thin strips.

Dice the feta. Wash the parsley and chop the leaves.

Combine everything in a salad bowl and add the black olives.

In a small bowl, briskly whisk together the oil, vinegar, salt and pepper. Pour the dressing over the salad and toss. Top with parsley and chill until serving.
