Caesar Salad

Romaine lettuce, eggs, anchovies, croutons, garlic, lemon, chives, tarragon

Steps

    Make the croutons: heat 1 tbsp of olive oil and a knob of butter in a pan over medium heat. Cut the sandwich bread into small cubes, add to the pan, and cook for about 15 minutes, stirring occasionally. Transfer to a bowl, add grated Parmesan, and toss. Cover and set aside.

    Peel and crush the garlic, remove the green germ, place in a salad bowl, add a raw egg, 6 tbsp of oil, and the lemon juice. Whisk to combine.

    Wash and pick the lettuce, then roughly chop the leaves. Halve the anchovies lengthwise, add them to the croutons and Parmesan in the bowl, and toss. Add everything to the salad bowl and arrange the hard-boiled eggs on top.

    Snip the chives and tarragon leaves and scatter over the salad, pepper and serve.
