Cucumber Raita

Cucumber, yogurt, cumin, garam masala, lemon

Steps

    Peel and seed the cucumber, then grate the flesh. Salt and let drain in a colander.

    Pour the yogurt into a bowl and season to taste with the cumin seeds, garam masala (or a mix of cumin, coriander, mild chili), salt and pepper. Squeeze in the juice of the half lemon and mix well.

    Rinse the cucumber and press it dry. Add the cucumber to the bowl, stir, taste and adjust the seasoning if needed, then chill until serving.
