Vietnam Ginger Chicken

Slice the chicken breasts thinly. Peel the onions and cut into thick rounds. Peel and chop the garlic. Peel the ginger and cut into very thin matchsticks.

In a wok or large pan, heat the oil and stir-fry the onion rounds over high heat for 2 minutes. Salt lightly, then add the chopped garlic, sliced chicken, and ginger matchsticks. Stir-fry on high heat for 3 minutes, stirring constantly.

Add 10cl of water, the fish sauce, and the sugar. As soon as it boils, pour into a serving dish.

Garnish with a few chopped cilantro leaves.
