Eggs, bell peppers, onion, tomatoes, feta, parsley

Steps

    Wash the bell peppers and cut into thin strips. Peel the onion and slice it thinly. Wash and chop a few parsley leaves.

    Brown the bell peppers in a pan over medium heat with oil (or butter). Add the onion and sauté for a few minutes until everything has softened.

    Add the tomatoes, salt and pepper. As soon as it starts to boil, lower the heat and simmer on low for 5 to 10 minutes.

    Beat the eggs and pour them into the pan, stirring well right away so they spread evenly. Cook for a few minutes, still on low heat.

    Meanwhile, cut the cheese into pieces and mix it with the chopped parsley. When the eggs look mostly set but still creamy, add the cheese and parsley to the pan, let it melt for a few minutes, and serve.
