Huevos a la Manchega

Steps

    Cut the ham into small pieces. Peel and slice the onions. Wash the peppers and dice them. Wash the tomatoes and zucchini and cut into cubes.

    Place all these ingredients in a pot. Drizzle with 10cl of oil, salt, then cover and cook on moderate heat for about 1 hour.

    Meanwhile, slice the bread and fry it in a pan with the rest of the oil. Drain and keep warm.

    Uncover the pot and finish cooking on higher heat, watching carefully, until the juices have completely evaporated.

    Crack the eggs into the pot and let them set, then serve immediately with the fried bread.
