    Wash the bell pepper and dice it. Peel and slice the onion. Plunge the tomato into boiling water for 1 minute, peel it, and cut into small pieces.

    Mix the diced pepper and tomato with the chorizo (and ham cut into strips, if using).

    Heat the oil in an oven-safe pan, add the mixture, then the peas. Lightly beat the eggs to break the yolks, then pour into the pan. Salt, pepper, and stir.

    Cover and cook on medium heat for about 10 minutes, then serve.
