Stuffed Avocados

Steps

    Cut the avocados in half, remove the pit, then scoop them out with a spoon, leaving about 2mm of flesh all around.

    Separately, cut the scooped avocado flesh into pieces and drizzle with a bit of lemon juice. Also drizzle the inside of the hollowed avocados.

    Dice the feta. Peel the onion and slice it very thinly. Wash the tomatoes and halve them. Wash, stem and finely chop the parsley. Wash and pick the mint leaves; set a few aside and chop the rest.

    Mix the diced avocado, onion, tomatoes and herbs, then add the oil and the rest of the lemon juice. Salt and pepper.

    Fill each avocado half with this mixture. Garnish each one with a mint leaf and 1 or 2 olives, then chill until serving.
